Where can I find dial plans, route lists, etc? 1

I have just taken over a site with an Avaya Definity G3 system. I am replacing it with another PBX. I need help finding all the current information that would be needed in order to provide a smooth transition to the other PBX.
Where and how can I find the following information?
dial plans
route lists
incoming digit conversions
TN and extension information

Something that would make this a lot easier on you than the switch is capable of giving you is using a program called Utilcall. This maps out everything for you and can even put it into a excel spreadsheet so you can upload it.
