I have two 500 sheet paper trays for the 850 and I was wondering if I could set up my 850 to work with both trays. Will this work?

Yes you can use both lower tray assys. The 840/850/860/8200 were designed to use up to 2 additional lower trays to give you 3 trays as well as the manual feed tray. As a note though you may find it difficult to feed heavier media over 32lb from the lowest tray.
