I’m sorry to admit this but I still don’t understand how the password on boot up of a new phone is reverent to anything. What’s the purpose of the phone asking for this ? I don’t need it.

It's only dialtone!!!
 
You need the password if you phone isn't 'provisioned' via DHCP or LLDP.

You also need it to reset/clear the phone's settings or to change signaling from SIP to H323 or vice versa. There are some more options hidden behind that password.
 
It's there so that nosey user doesn't mess up their phones.
