dumb question how do change phone on a S8300?

Log off the phone, then you should be able to change the type.

Ok the logging off phone works but is there a better/ simpler way? With out having to log off the phone?

Yes, if you can busy/release.

Busy Station XXXX

then

Release Station XXXX

before the phone re-registers, you can do a "change station XXXX", to change the set type
