You might try downloading an Active Directory Checker. I use NETIQ ADcheck. It has been able to clue me in on some AD issues my network was having. This will at least let you narrow it down a little.
I would first start by disabling any firewall you have in place. Windows XP inherently blocks file and print sharing so under the security center assure that it is enabled. then create an account on both machines with the same username and password exactly.
Make sure that you are not getting too many timeouts. to check do a constant ping with a packet size of at least 1000 bytes. If it is timing out fairly often you might have some interference. these timeouts will severely hinder smtp.
If you are using DHCP on your network, and security is not an issue, you can just plug in a standard Linksys AP and away you go with the adapter connecting to the ssid of linksys. the switch and access point will communicate flawlessly
In looking at fixing the problem I would start with your HDD's. if the processor isn't being hammered they might be on the verge of locking up (ceasing 'sp').
Did you load the drivers (press f6) when you booted from the windows 2003 server disk. It will need this driver information before the installation can procede. I am assuming this is the boot disk. if not then I am way off base.
You might actually get away with using your router / default gateway as the DNS. It will then transfer outside dns requests and also still be able to resolve internally
Uninstall terminal services would be my first step if you don't want to use it as a terminal server. at which point I believe you can have up to two contiguous sessions going at the same time.
