You can do it in Linux with the dd command!
dd if=/dev/fd0 of=disk.img
You can then store the images on your network, and back them up. Should you ever need them, then:
dd if=disk.img of=/dev/fd0
Will reproduce those disks for you.

When you first enter the setup, look at the bottom of the screen. It will say hit F6 to install additional controllers. Hit F6 and then wait a minute or so. You will get another screen that you did not previously see. You need to have a copy of your scsi driver for win2k3 on a floppy ready...
You may need to hit F6 at the beginning of setup to install your controller drivers before Win2K3 will see your drive.
