You're best to start by making a list of things you want the system to do for you.
For Example: Employee management, payroll, reporting, inventory & stock management, obviously point of sale, credit card integrations, cash management features etc etc.
You can get very cheap POS systems that just allow you to sell things or you can get POS systems with all the bells and whistles and do everything, but you obviously pay more for the latter.
