With Aloha there aren't really any installed files in windows, the files are copied to an aloha folder, a shared drive is created and user accounts, environment variables and services are started. You can delete the aloha folder and stop the services to completely delete the aloha program.
The windows installed programs on a udoc are a "very basic and limited operating system to run a small pos program", don't expect to be able to install other system components and programs without further installation of windows system files.
