Where can I get documentation on building an Exchange Server?

Hello,

I need to build an Exchange Server from scratch. Does anybody know an exact link to step by step documentation on how to do that? Also, can I still purchase Exchange 2003 or 2007 only? If I can not purchase 2003, then please direct me to documentation on how to build a 2007 Exchange server.
