What is a new server environment?

Do you mean walking into a new job with no direct discussion with the previous IT person available? Or are you asking about starting with a new server? Or are you asking about adding a new server to an existing network?

I'm Certifiable, not certified.
It just means my answers are from experience, not a book.
 
You have to have physical proof. Either the actual licenses from MS (they've stopped doing this), or your PO's showing that you've purchased them, accompanied by the info available online from MS Licensing showing the purchase if you purchased licenses only, or the "boxes" they came in.

You would think that somewhere in the operating system or the registry there would be some indication of what is installed on a machine as far as CALs are concerned.

Under Licensing you can look. Its under Admin tools
 
Check with your purchasing department. Maybe they can provide you with the vendor your predecessor purchased the server through. There might be a good chance they got the CALs through the same vendor. Contact the vendor (reference invoice #) and they maybe able to provide you with licensing info or a Microsoft contact.
