We have multiple IP's and want Multiple websites...

We have about 18 static IP addresses (don't ask me why). Currently we are using two - one for our router and one that directs to our Company Website.

What we would like to do is add a three more websites for non-profit groups some of our employees are heavily into. We want to use some of our static IP's to host these additional sites on our current web server which is running IIS 6. I don't want to use virtual servers (I don't think) because I don't want to manage these sites day-to-day - I'd rather the non-profits do it themselves.

Is the IP-per-NIC solution the best? Other options?

You can assign multiple IPs to one NIC.
In your TCP/IP properties, click on "Advance" and add your IPs.

In your IIS settings, when you configure the new site, just assign it the correct IP. (Don't use "All Unassigned")

We are running 5 sites with different IPs this way.

 
If your using IIS6, just use host headers, no point in wasting IP for each site. You can run 100's of sites from the same IP. Just give the people who want access FTP to the corrent folder on the server for them be able to upload the files to the server, that should be all the need.
