VoIP between S8300 and S8700

We have multiple stand alone S8300's in G700's out in field offices which are connected to our WAN via Frame Relay. Currently, we only use the frame relay for admin. We'd like to start making calls between the S8300's and our S8700 at HQ.
We're using CM 3.1.2
No overlap in dialplan.

Request help on two things:
1. On Support.Avaya.com which documents show me how to set up IP trunking.
2. Does anyone have a step by step guide they use to set up their IP trunking.
