User changing company within same domain 1

We have one domain, 2 companies, 2 Exchange stores on 2 servers.

User (say JimSmith) is being transferred from Company A to Company B. His new email address must be jimsmith@companyb.com; however, he must continue to receive all email being sent to jimsmith@companya.com for some time.

What is the best way to approach this?
 
Setup a mail enabled contact and forward it from A to B.

I'm Certifiable, not cert-ified.
It just means my answers are from experience, not a book.
 
Depending on configuration, you could just add the new SMTP address and change the default address.
