What is the recommended practice in terms of the use of an AD domain controller as a working server. ie should DCs be dedicated to running their FSMO roles or is it acceptable to use them as working servers, as file stores, application servers etc.

AD DCs by default make poor file servers since the write back cache is disabled in order to avoid database corruption. I have had customers install the gamut of applications on DCs since it is their only machine and although in theory they'll work, but in practice you have to contend with security and performance issues.
If you can afford it DCs should be dedicated to running AD and network services like DNS, DHCP and WINS (if necessary) only and not application and file/print services. These services should be relegated to other server machines
