Upgrading boot drives

I have two mirrored drives (20GB) that contain the operating system (server 2003) and a raid array with 800GB. I need to upgrade the two drives because they are running low on space. Any ideas on making it as painless as possible. I thought I would replace one drive with another larger and remirror, then break the mirror and use something like partition magic to increase the partition size - replace the second drive with a matching larger and then remirror again. I need to keep this system up and running, so I can't afford to try and ghost and run into a problem putting the image back.
