We have an existing ERP system that uses SQLServer as the back-end database. We will be upgrading from SQL7 to SQL2000 but I'm not sure which version of MDAC should be running on the clients when connecting to a SQL2000 database. Should I just put the latest version of MDAC on the clients?

I would start with putting the latest on a test box and make sure it all works correctly. There should not be any issues, but you know how that goes. If there are, start droping down versions and check with your erp maker about mdac for it.

HI,
Sqlsever 2000 comes with MDAC 2.6 and SP3 updates it to 2.7 whereas an update of MDAC 2.8 is also available from microsoft download site.

You should first try 2.8, hopefully you won't face any prolemns.
