Long story as short as possible, with as much detail as my limited knowledge in DNS will allow...

We recently switched online stores from one hosted ourselves onsite on a dedicated server, to one hosted by a third party company offsite. We're using the same domain name for the new store as for the last, with different IP addresses (obviously). We are unable to get to the new store site or the store's admin site from within our network. We noticed a DNS entry on the server (Windows 2000 Server) that points to where our old store site was located (that server has been shut off). Would deleting this entry possibly allow us to go outside the network to the new store site? Are there any potential pitfalls to watch out for?

Change it, don't delete it. If your DNS server is handling your domain for internal users, then it needs that record or no one will be able to look up the name.

You probably have an outside provider hosting DNS for the same domain for public consumption. They should have a duplicate of that record.

It depends. If you LAN domain name is different from the outside domain, deleting the A record should work. If the local domain name and internet domain name are the same, you need to modify the DNS record pointing to the outside domain IP. This search result may help,
