if I want to send a new mail, the standard toolbar is greyed out, so I cant choose an onther font, fontcolor, etc

It sounds like you are set to plain text - in this format (required by most internet groups, mailing lists etc) you only send ascii characters, without any other formatting.
The other options are RTF and HTML formatting. Jonathan Challis
