Text is Grayed Out In Email

Hi, I have a user who is recieiving emails thru outlook 2000 sr1 client, on a W2000 SP4. SOme of the emails are coming in with the text "grayed out", similar in appearance to the way some footers are in a word doc. it appears totally random, she has recieved multiple emails from a user and some are grayed while others are fine.When these are grayed out, I cant do anything with the text (cut,copy,paste etc) I can see no pattern to this. This person is the only user in the building that this is happening tooo.

any ideas?
