How do you test 2900 Cisco Switches to see if they will work.

If they boot up and pass the power self test then more than likely it is ok . Logg into the console and watch it boot up and look for any errors , if none seen and it boots up to the initial config dialogue then it's ok .

Do I need to use any software? Can I just plug a CAT 5 into a laptop?

well, you should console into the switch itself, especially if you dont have a management IP for the switch set up. You can console in and use hyperterminal to display the console emulation.
