I have a user who currently has a 7911 and is requesting speaker in which I want to swap out to a 7940. Is there an easy way to do this in CM?

Swap 7911 phone to a 7940

You have to create a whole new phone profile. You can leave the 7911 in place at first. Once you create the 7940 with the same number, it will appear as a "Shared" line. Both phones will work under the same number until you swap out the phones and delete the 7911 profile.
