In photoshop, when you stroke a path you can click a box that simulates pressure--is there a comparable GIMP function?
I want to create paths that start and end skinny with width in the middle.

Well, there is a fade-out option, which fades towards the end. Two of those strokes starting at the same place but going in opposite directions might produce a reasonable simulation of what you're looking for. Also, if you're using a tablet, you can use the pressure sensitivity option to produce variable-width lines. That's about it as far as I can see.

Just realised, there is another option. Define a gradient which transitions from transparent to the desired colour and back to transparent. You could duplicate and edit the "FG to transparent" gradient to achieve this. Then, before painting your strokes, select the "use colour from gradient" option, pick the new gradient, and set the stroke length.
