What would cause AAM to keep changing its autodiscover service back to an old location. Is that a dhcp scope option somewhere. It keeps reverting back after I change it to the new storage destination.

What release are you running? That sounds like a pretty low-level 1st time setup question/setting.
I'd say go over the steps in the install guide with a fine tooth comb, try to be at the latest load or patch you can and keep at it.
Is your service account setup, tested, enabled and working with the impersonation permissions required?
Do you have Exchange set up to permit the authentication type required by AAM to login with that service account?
Can you do things unencrypted and maybe Wireshark your DC and/or Exchange server to see what AAM's trying to do and see where its tripping up?
