Enable the shadow copy service on a server volume, then install the shadow copy client software on the workstations (on the 2003 cd or MS site). When you connect to a share you can right click a folder and see how it looked last time a shadow copy was created (default twice a day). Up to 60 versions are kept so default this should allow you to look back 30 days.
To use Win2k clients you have to install the shadow copy client on the 2003 server as well.
The shadow copy service only allocates 10% of the HD so when this is full it starts overwrighting the oldes data.
Also only changes are copied after the original file so they are quite small, this has the added advantage of being able to roll back a file to a point in time.
