Server backup / sync of outlook pst files (or local settings folder)

Hmm.. I know that you can not redirect the 'local settings' folder that by default .pst files usually are stored- So what is the best way of setting up a server backup of local user outlook files? The server is 2003SBS and all clients are XP SP2. Would appreciate any guidance given..
