[SENDMAIL]: whwre's the smpt server string?

Hi all!
I'm newbie of sendmail and I don't understand where's teh exactley point I tell sendmail my smpt server.
I have the sendmail configured and recentley we have changed the mail server. Now UI have the necessity to tell sendmail "please use this smpt server to send the email".
