Go in AD on your 2k server and select the user for whom you want to create the profile. Right click, properties, profile tab and enter the folder name where the profile will be created.
Go on your 2kpro box and login as your domain user. By default the respective folders for this profile will be created on the folder on the server. Don't forget to assign permission to this folder to the domain user and check you have shared this folder or levels above
As Noip said, you will need to share the Folder that will contain the users profiles and allow appropriate Share level permissions so that it can be accessed.
However, you won't have to assign NTFS permissions to the indivdual users profiles folder that will be created inside of the Share. Windows will automatically assign Full Control for each user on their respective folder. The Administrator will not be included in the DACL for the users profile folder, but of course, can take ownership and then grant himself/herself whatever permissions they like.
When you enter the path to the folder, make sure you include %username% (which Windows will fill in with the username of the profile you are editing).
