Remove Exchange Server 2000 question

I recently moved Exchange to a new server, different name. I have had my old servers Services stopped for awhile now, and have had no problems yet. I want to do the last step to remove Exchange from the first server by putting in the CD and removing Exchange... is this the best way to do it, or manually?

Also, of bigger concern someone before me loaded several programs on the old server, will the server still be the same name and everything, just without Exchange... wouldn't want to screw up these other programs, cause I have no idea how to install them again.
