I'm looking for some help in deciding the best way to give my remote user (laptop) access to mail, what I would like is them to be able to pick up mail from exchange but not actually store the mail on the remote laptop, in case of disaster with the laptop. I have vpn capability and dialup on the laptop. I’ve looked at SMTP but that means the mail needs to be downloaded to the laptop?
 
Have them do the Corporate setup with Outlook just as if they were at work or use Outlook Web Access.

I've tried setting them up in the building ok but what do i need to configure to access from outside the office? the vpn side of things is ok because i can map a drive on the exchange box?
 
If you have the VPN connection working you should be able to setup your mail the same way as if your in the office. Have you tried? The only thing that I can think of that would prevent it is network routing or restrictions, ie; Firewall between VPN device and exchange, No routes to the mail servers network from the VPN device. You shouldnt have a problem like that though since your having no issues getting to your file servers
