I have a new hard disk in a workstation, and 2 DVD's that contain the ghost images for the computer. How the hell do i restore these using Ghost version 9????

Both images need to be copied over as 1 is the IBM Recovery partition and the other is the actual C-Drive. The Ghost manual is very good at avoiding this restore type.

You should have had the option to create bootable media so that all you had to do was to put your DVD into the drive and let your PC boot off the DVD and straight into Ghost. Since you have not got this, you will have to create a bootable floppy disk with CD/DVD support - there should be an Option in Ghost to do this. You can then boot off that floppy disk and use Ghost to restore the partitions off your DVD

You should also be able to boot from the Ghost CD. Make a cup of tea and get yourself a book to read first though, because it's a painfully slow process.

Jonnyknowsbest, I recommend that you read Chapter 6 (page 63+) in the Norton Ghost 9.0 User's Guide. The process is really quite simple.
