Recommend Good Backup Solution

Currently our laptops are using a Roxio CD Project to backup info. However a cd project will not backup new files that have been created under the folders that are specified in the cd project and we need to come up with a new backup solution. Here are the requirements:

1. We want our users to be able to backup their my docs folder and their outlook folder without having to manually configure the backup job everytime they want to backup. (Something similar to a roxio cd project where all you have to do is double-click the project and then push the burn button)

2. They need to be able to backup to a cd

3. We dont want the backup to be in a propiatery file format (Like dantz retrospect.) We are looking to make exact copies of the files and folders to the cd.

What will you do if the outlook pst folder gets over 800 Mb?If you are talking about no to much data, give them a memorystick of 1 Gb or more, and use some synchronise software to backup the folders to memorystick.

Thanks for the insight. Which synch software would you recommend. Will something like hotsync also sync mydocs to the memorystick. Can windows offlinesync work in this situation?
 
Looks great, but - some of the machines are win 2000 because they have to run some older dos programs.
