First make sure you have deleted items retention turned on. Then you go into ADU&C and go to the properties for the user. Go to the Exchange advanced tab and click on Mailbox Rights. You have to add yourself, or the person who will be checking on the situation, with full rights. Then go to your Outlook, tools, e-mail accounts, next, change, more settings, advanced, add. add the employees name there. ok out of everything, restart Outlook and you will find their mailbox at the bottom of your list. You can even recover deleted items(if you had turned it on) and see stuff they thought they were hiding from you.

make sure your company has an inplace privacy agreement. This is a great way to get a lawsuit against your company
have all users sign an agreement stating that their email and computer use is for company work only and they are subject to be monitored by admins...blah blah, of course in legal terms
Right, left that part out. Used to be it was just understood that if you are at work on company time on company equipment you should only be about company business. We actually had to let someone go over inappropriate use of company resources.

Thanks, both of you. I appreciate it. Yes, I have had employees come to me with the whole, "but it's MY email...MY computer...." Um, not it's not, those are at YOUR house. Yes, we have a privacy agreement in place. Thanks!
At our place we have the legal agreement item set through group policy.
i.e. When user hits ctrl-alt-delete to log in a screen displays with some legal verbiage that they have to hit ok to accept before the login screen proper appears.
Text is the usual - no privacy, resources and all information belong to company, if you are not authorised to access this system you are committing a criminal offence etc. etc.
Text of ours is as follows, we have an in-house legal dept. so I am presuming mgt. had them pass it as ok :-

All materials and information created, transmitted or stored on this system are the property of xxx Corporation and may only be accessed by authorized personnel.

I think the first version had AND MAY BE A CRIMINAL OFFENCE at the end as well, guess they took it out. I never read it anymore, I just hit OK. And me a senior admin. :-D
