Quarkpress printing

Can someone please look at the tutorial at the URL below and explain how the sample book will be binded. The way page numbers are appearing, i don't get it how they will all come together.

I could not download the Quark files - kept getting error mesages, But I looked at the lesson2.pdf - - the pages are in reader spreads - -but this book will be binded - saddlestitch, the printer will have to turn these spreads into printer spreads. One thing is that I only see 10 pages with some blank areas are these blanks printing as well?
