Hi there, I have been googling like a champion for about 45 minutes and cant find a plain english reason or pretty much anything about two folders in there.

The folders are:
\Program Files\exchsvr\Address
\Program Files\exchsvr\SERVERNAME.log

Why are these two folders shared on my exchange server and what are they used for?

From memory the address one is for connectors and you can unshare it and the log folder is for a log of Exchange installation / service pack installation and if you don't need to see that remotely you can unshare that too.

Is there any documentation for this?

The Address folder can really be unshared?
Take that auditors!
