Prioritising traffic to specific NICs

I want to set up a server which will be connected to 2 Physical LANs... 1 for user access, 1 for data backups....

One way to approach this would be to set the binding order on the NICs, and use local host files to resolve the IP addresses for the backup network, as DNS resolves against the user access (Public LAN)

Is there any other ways of achieving this!? - I want to deploy a mix of wintel/unix servers in this way, so thought perhaps doing something with a secondary DNS on the backup network would be viable/adviseable.... any thoughts?
