Incase you haven't figured this one out yet - from the inside it's simply the IP address of the machine or DNS name if you've got that set up,
from the outside, via a Firewall its the Public IP address you've assigned the Exchange server, or if you're going via a re-mailer in the DMZ it will be the public address of that machine.
