Our Polycom phones are configured as Analog "500"
Is there a way to shut off ringer. I can't seem to find a feature that allows me to do this.

there is no feature to turn off ringer, normally you turn down ringer

yes , in the mod tap ( if you're using one ) on the master adaptor there is a mod capasitor in the unit , simply cut this out , this will stop the earth signal reaching the bell , and by magic no ringer

you don't assign keys on 500 analog sets.
