How can OUTLOOK 2000 be set up to automatically print a FAX when it comes in?

Not aware of a way, but there are applications that bolt onto Outlook and provide the functionality you require for you (e.g.):

Depending on the software you use, does it say FAX in the subject? If so, rules wizard allows you to print stuff.
