Notification of undeliverable mail

I am a newbie to writing a CF script. Anyone have any ideas on how to accomplish this?

running a scheduled CF script to check the folder for entries, then read those files and check for the subject from those emails (something like "Subject: Quote Q-"), then parse the "From: " and "To: " , send a notification to resend the quote to the sender and delete the file.
