Cable pricing is differant between the cable types, as is the requirments to use each. I'd call local cable supply house to get pricing. Typically pricing will be slightly cheaper per box if you make bulk purchases or are a repeat contractor. Don't see the need to Tone cat 6 as that is typically a cat3 action. Any cable job should come with labels both jack and closet side. Certification of cable with a Fluke is more standard with Cat 6.
Simple rule of thumb, take your supply cost, multiply that by 2, subtract the larger # from the supply number, there's a ball park area to figure your labor cost.
Since this also seems to be your first time in the cabling rodeo, call a few contractors and ask for ball park pricing per drop. Never hurts to ask...
