Need help with an Exchange 2K Trial Server

We are evaluating a couple of new mail server solutions including Exchange and need some help routing mail. It is currently installed internally but I would like to send mail through my existing mail server and receive from it as well. I have set up a second email address for myself and others on the test team and am able to receive mail through a forwarding statement on the current server (Eudora Internet Mail Server). How do I set the Exchange server to route mail to my current server? Any help will be appreciated!
