moving from exchange 2000 to 2003 1

Hi I have just installed two new 2003 domain controllers and I have a 2000 domain controller running exchange 2000. I want to install exchange 2003 on one of the new servers and keep all the mailboxes etc, and then remove the old 2000 server. What I would really like is someone to point me to some documents on this subject, or tell me what I need to consider along the way.
