After renaming a domain how do I get my clients to the new domain w/o physically going up to each one? For instance old domain name fred.barney.com new domain name is fred.com. The 2000 prof machines all still use pc name.fed.barney.com. Is there a central spot to change all of these. Also can I change the DNS server in the network proporties on the clients from the server?

Unfortunately, changing domain membership requires a reboot, so you'd need to visit the clients (get yourself some remote control software....). As for the DNS IP change, that can be done via the registry or DHCP...

Your only remote way of doing this by 3rd party software. You could try and use the Active Directory Migration tool you can freely download from microsoft. That will change the domain membership of any client workstation. Although is sounds like you destroyed your clients domain so it may not work correctly, but it is worth a try.
The other option is to generate a script to run on each client that will change its domain affliation, and you could use the command line tool, netsh to import from a txt file settings that you want.
