If I have an IP address is there way to tell if it is an NT or Linux/unix box??

If you receive mail from them you can look in the extended header information for the name of the mail client.

Otherwise, just from the IP you cannot tell.

I think it only works for web sites, though.

nmap has the ability of identifying remote operating systems by detecting particular traits in the packets the target generates. It is not 100% accurate, but it is fairly good.

You can telnet to it on different ports. Try 22, 23, 25, 80 etc. and see if one of them identifies the operating system.
