How can we provide someone that is not really part of our organization with an email address. The user works for another company but we would like to give him an email address for ex. mark@ourcompany.com but we would like to have any emails coming in to that address forwarded to mark@hiscompany.com.
How would I create this.

He doesnt have to access our network nor do we need to have a copy of those messages stored on our exchange server.

create normal account/mailbox for the external user. then create a mail enabled Contact with the email address of the external recipient. on the regular mailbox go to the Exchange General tab, to Delivery options, and configure the forwarding address to be that of the Contact you created.
 
Is this the only way that exchange 2000 allows you to create a mail enabled user?

We didnt want to create a user login account in our domain or have that persons emails sit on our servers.

is there anyway just to create a mail enabled user without having to create a domain user or have there mail sit on our server?

you don't have to have the emails sit on your server, they can be forwarded out without saving a copy. In addition, if you don't want internal folks to see the normal mailbox, just hide it from the GAL.
 
Like bronto said, that's the way.
It's not because you create a user that they can log on, restrict that.

when I create a user in ADCU (unchecking create mailbox during setup) and i right click the user and click exchange tasks the wizard pops up wit the following choices:
Create a Mailbox
Establish e-mail address
Enable Instant Messaging
Remove Exchange Attributes

What/when would Establish e-mail address be used?

establish is basically the same thing as creating a mailbox, except it lets you choose the address type.
 
Is the custom email address that I create the only address that user will go by. For instance if i were to send him an email as mark@ourdomain.com and the custom email address that I created was mark@hisdomain.com would he still recieve the message. In other words eliminating the extra step of having to create bothe the user object and then a contact?

yes, that's correct. you can create a user object without creating a mailbox, then run the "establish" thing, giving the user object an external address. that user will then show up in the GAL like a normal internal object, but mail sent to it will go outside.
