It isn't a good idea to backup open files in the general file system. If you restore a part written file it might cause a lot of problems.
Apps like Exchange and SQL Server have databases with full transaction logging. They have their own utilities that enable backup while the server is online. Any part completed transaction would be rolled back or forward if the backup were to be restored.
The only way to backup open files is to use 3rd party software like ArcServe that has an optional Open Files Agent.
It's better to schedule the backup to run unattended overnight when everybody is out of the dbf's
