Logging changes to Access

We have a form that we want to be a web form to a database. But a lot of people have to touch it, so we want some kind of logging, with email notification if possible, any times someone creates or changes a record.

Any one know if Access can do this?

I've look into Data Access pages but cant seem to find anything which will log a change automatically, unless we add a field for each point in workflow.

Do you know of anything more specific/automatic?
