Local Mail Server

Hi,

I would like to set up a local mail / smtp server using IIS to enable me to test emails locally - ideally without connection to internet so I can demonstrate without web connection.

I was at a demo where I saw people creating forms for the internet that got posted to a dummy local account and this could be viewed in outlook. This all happened without a live internet connection.

I have WinNT / IIS / Outlook etc. can anyone point me in the right direction?
