That depends on the phones current firmware version vs. what the upgrade will bring to the table. You could forced new firmware on the phones before upgrading, if you point them at a webserver or upload the files to the SD card (or recreate it, which is faster)

Hippos have bad eyesight, but considering their weight, it’s hardly their problem
If you disconnect the system from the LAN before upgrade the handsets will not reboot, but you will need to make them reboot if you want them to upgrade to the correct software level afterwards
I tried that once, phones stayed in searching for 3 minutes, the IPO reboot took 4...from that day I refused to do upgrades during production hours
