Hi Guys

I've discovered that my exchange administrator has access to my mailbox. We are on an exchange 5.5 server. Is there anyway I can tell if someone has added my mailbox to their Outlook profile. Or if someone is viewing my mail?
This could come as a third party application or Windows popup.

No, not really. It's pretty much a given that any administrator of any computer environment has the privileges to enable them to access user data, this isn't just an Exchange issue.
